Steps

Whisk the eggs + sugar in a bowl with a hand mixer at high speed until they almost triple in volume.

Gently fold in sifted flour with a metal spoon in batches.

Add your flavouring and mix gently until all flour is well combined.

Bake at 180°C for 25-30 minutes in well greased baking tin.

Serve when cool with whipped cream or just sprinkle icing sugar on top.
