Firstly wash n roughly chop the spinach n blanch fo' 5-7 minutes.. Remove from hot water n put in ice cold water to resist the color of spinach then blend in a mixture blender to make puree

Wash and soak chick peas 6-8hours or over night in sufficient water and boil for 35-40 minutes in pressure cooker by adding1/2 tsp of salt till get soft

Roughly chop onion, tomato, ginger and green chilles and blend in a mixture blender.. Soak cashews in hot water for at least one hour then make paste with the help of a blender

Heat clarified butter/ghee in a pan and stir fry the onion, tomato mixture till releases the oil..Add cashew paste and mix nicely..add salt(be careful while adding salt as it is already present in boiled chick peas and blanched spinach),red pepper powder, garam masala,chick peas and give a good mix(keep 2-3 tbsp of boiled chickpeas aside for garnishing)..cook for 5 minutes and add spinach puree and cook 2-3minutes more (don't over cook the spinach to maintain it's green colour).. Flame off

Transfer in a serving bowl and spread boiled chana over.. Half cutted tomato in the centre and place 2 roasted /fried spinach leaves on the tomato by piercing in the tomato with the help of a tooth pick..make a flower with fresh red chilli juliens around the tomato..Drizzle lilltle malai/cream around

Serve hot with fried rice or manchurian and lachha paratha

📝If your serving bowl is deep as mine then place a bowl on the bottom of serving bowl then pour spinach with chick peas on it and arrange tomato and spinach leaf decoration
