Orangy Pumpkin

Dry roast dices pumpkin on tava for 5-6 mins on medium heat.

Take a pan heat 2 tbsp oil, add cumin, mustard seed, hing, let them sizzle,

Then add chopped onion saute it, for a min then add freshly ginger garlic paste, saute then till raw flavour goes out,

Now add roasted pumpkin

Mix well cover it for 2-3 mins then add coriander powder, salt, red chilli powder, haldi powder, mix well

Now add chopped tomatoes

Mix well and cover it for 5 mins, cook them on medium flame, after 5 mins add 1/4 cup orange juice

Mix well and cover it for 6-10 mins. In between stir occasionally

When all pumpkin gets cooked and mashy and coriander leaves,

Serve hot with chapati
