Whichever bakery you go in Brazil you will find this Middle East inspired pastry. One of the best things you can have as afternoon snack!!!

Place dry ingredients in a bowl for the dough. Add wet ingredients and knead until elastic and smooth. Leave it to rise for 1.5 hour.

Meanwhile, prepare the filling placing the minced meat in a bowl and adding all the other ingredients, mixing well by hand. Transfer this mix to a sieve so the juices of the meat and tomato can drain.

After the dough has risen knead again to eliminate any excess of air bubbles. Grab a small portion (approximately 35 grams) and roughly shape it into a circle. Put one tsp of the filling in the middle of this piece of dough and joint the borders so that the resulting shape is a triangle shape. Repeat this procedure with the rest of the dough, placing it in a floured tin (about 2 cm space in between each).

Beat an egg and pass it over each sfiha with a brush for a nice shiny gloss. Bake for 25-30 min at 180 degrees Celsius and... Enjoy!
