Awesome persian inspired side dish. Would be great served with some grilled chicken. Lastly, saffron is pricey but its flavor is different from anything you've tasted; it's worth the price in my opinion :)

Cooking Instructions

Slice the pepper as thinly or as roughly as you like. Fry in a tablespoon of oil in a pot over medium high heat

As soon as it becomes fragrant (5 min), add washed barberries. Stir

Next, add saffron (I added quite a generous pinch) and rice. Stir everything

Lower the heat then add water. Stir until most of the liquid is absorbed (15 min), then take off heat and cover with a lid for about 10 minutes

Taste and season to your liking. Serve with olives if desired. Enjoy :)
