**This salad was ok...never had fresh mint so I think that's an aquired taste! I subbed with clemintines and lettuce mix I had on hand. I layered salad into four 1-qt jars: dressing, orange pieces, chicken, mint, lettuce.

1large navel orange
3 Twhite wine vinegar
1 Tolive oil
1 Thoney
1/4 tspsalt
1/8 tspblack pepper
2 cchopped chicken
1 (6.5 oz)package sweet butter lettuce salad greens
1/4 cfresh mint leaves, torn

Steps

Peel and section orange over large bowl, squeezing membranes to extract juice and placing section in separate bowl.

Whisk into juice the vinegar, oil, honey, salt and pepper.

Add orange sections, chicken, lettuce and mint. Toss gently and serve immediately.
