Mix the wet ingredients (cream the margarine and sugar)

In a separate bowl sieve the baking flour, baking powder, salt and ginger spice

Mix the dry ingredients into the wet ingredients (Add the eggs bit by bit as you sprinkle your sieved flour to avoid cuddling)

Keep folding in one direction till you get a dropping consistency

Add the lemon rind and lemon cordial juice as you fold it, don't overmix the flour

Grease the baking tin with margarine then insert the parchment paper
- 7
Pour in your dough and let it bake for 45minutes at 160 degrees

Once ready let it cool first before decorating or serving it as a snack
