Ingredients

  1. 2.2 lbschicken feet (1 kg)
  2. 3 stalkslemongrass
  3. 1 pieceginger
  4. leavesFor the dipping sauce: seasoned salt, calamansi (or lime), sweetened condensed milk, black pepper, garlic, chili, lime

Steps

    Wash the chicken feet in diluted salt water, remove any remaining yellow skin, and cut off the nails. Rinse again with vinegar and drain well.

    Lightly crush the ginger and lemongrass. Add the chicken feet, ginger, lemongrass, and 1 teaspoon seasoned salt to a pot of water. Boil the chicken feet. When the water comes to a boil, reduce the heat to a gentle simmer and cook the chicken feet for 5-6 minutes. Remove the chicken feet and place them in a bowl of cold water, then drain and store in the refrigerator to keep them firm and chewy.

    To make the dipping sauce: Mix together 3 teaspoons seasoned salt, 4 teaspoons sugar, 3 teaspoons sweetened condensed milk, 1 teaspoon chicken boiling liquid, juice from 3 calamansi (or limes), 1 teaspoon black pepper, chili to taste, and a little minced garlic. Stir well, then add plenty of finely sliced lime leaves and calamansi (or lime) peel. Everything is ready to serve!
