
Leek & Potato Soup

Steps

Peel and chop all the vegetables

Place the onion in a saucepan with 150ml of vegetable stock and let this boil for 5mins

Add the potato, leek, and the rest of the vegetable stock to the pan and being this to the boil

Salt and pepper to season and simmer for 35minutes
- 5
Following simmering, pour all the contents into a food processor and blitz for 2 minutes or until the desired consistency
- 6
Serve or separate into containers for storage
