Ingredients

  1. 2 teaspoonOil
  2. to tasteSalt
  3. 1/2 tsp Mustard Seeds
  4. PinchAsafoetida
  5. 6-7Curry Leaves
  6. 2Garlic cloves crushed
  7. 1Green Chilli finely chopped
  8. 2 tbspchopped Coriander leaves
  9. 1 teaspoonLemon juice
  10. 2potatoes boiled and mashed
  11. 1/4 teaspoonTurmeric
  12. 1 inchGinger crushed
  13. For Batter
  14. 3/4 CupBesan
  15. 2 tablespoonrice Flour
  16. 1/2 tspKashmiri Chilli powder
  17. to tasteSalt
  18. 1/4 teaspoonBaking Soda
  19. pinchHing
  20. 1/4 teaspoonTurmeric
  21. 1/2 cupWater
  22. Oil for frying
  23. For assembling
  24. 5-6pav
  25. 5-6green Chillies
  26. 6 teaspoongreen chutney
  27. 3 teaspoonsweet chutney
  28. 3 teaspoonGarlic chutney

Steps

20 mins
  1. 1

    Heat oil in a pan and splutter mustard seeds

  2. 2

    Add curry leaves and hing. mix well

  3. 3

    Add ginger garlic green chillies and coriander leaves. saute until raw aroma goes away

  4. 4

    Add mashed potatoes and salt. mix well

  5. 5

    Add turmeric and saute for a minute. switch off

  6. 6

    Add lemon juice and mix well. allow to cool

  7. 7

    In a bowl mix besan and rice flour

  8. 8

    Add baking soda, spice powders and salt

  9. 9

    Add water as required to form smooth thick batter

  10. 10

    Make lemon sized balls from potatoes mixture

  11. 11

    Coat well with besan

  12. 12

    Drop in hot oil. fry over medium heat until golden brown

  13. 13

    Make churas from leftover besan. deep fry until golden brown

  14. 14

    Fry green chillies until it starts wilting

  15. 15

    Drain excess oil over tissue paper

  16. 16

    Slit pav halfway

  17. 17

    Apply green chutney, garlic chutney and sweet chutney on pav

  18. 18

    Place vada, green chilli and little churas. Serve hot
