Heat the 2 tbs oil in a small pan. Take maida in a mixing bowl. Add salt, baking powder, ajwain and hot oil. Mix well. Then add warm water and make a firm dough. Cover with wet cloth and keep aside for 30 minutes.

Meanwhile boil the green peas and smashed them coarsely.

Heat the 2 tsp oil in a pan. Add cumin seeds, asafoetida, ginger chilli paste and stir for a minute.

Now add turmeric powder, red chilli powder,coriander seed powder,cumin seed powder,aamchur powder,chat masal, garam masala, fennel seed powder and salt.

Now add coarsely smashed peas. Stir and mix well.

You can add more spice powder if required. Switch off the gas and let it cool down.

Make equal size ball from the dough. Roll it into the small circle.

Put some stuffing in the centre. Apply little water to the edges. Bring all edges together and press it downwards.

Roll it gently into the small size puri.

Now heat the oil in a pan on low medium flame. Fry the matar kachori on both sides till it becomes golden and crisp.

Kachori is ready to serve. Serve with sauce or chutney.
