Ingredients

  • 115 mlOlive oil
  • 2 tablespoonsred wine vinegar
  • 1/2 cupfinely chopped parsley
  • 3large garlic cloves
  • 2small red chillies
  • 3/4 teaspoondried Oregano
  • 1large pinch of coarse sea salt
  • Season with pepper

Steps

  1. 1

    De-seed and finely chop the chilli and the garlic. Mix all ingredients into a bowl. Let stand for 10 minutes to properly infuse the flavours.

    Use as a sauce for meat and grilled veggies. It can be kept for a day in the fridge.
