Ingredients

  1. Bread toasts
  2. 2red bell peppers
  3. 1eggplant
  4. 2hard-boiled eggs
  5. 2 canstuna or 3.5 oz (100 grams) of salt cod flakes
  6. 2garlic cloves
  7. Extra virgin olive oil
  8. Salt

Steps

  1. 1

    Prepare the esgarraet. Since I didn’t have salt cod flakes, I used canned tuna instead.

  2. 2

    Chop the hard-boiled eggs and add them to the bowl with the esgarraet.

  3. 3

    Add a pinch of salt and a generous drizzle of extra virgin olive oil, then mix until everything is well combined.
