Jollof rice

Parboil the rice till it’s almost done, drain and set aside.

Cut the vegetables in to desired shapes and set aside.

Heat oil in a pot and add all the veggies (except the parsley) add the chicken strips and allow it to cook till all the veggies are tender,

Pour in the stock/water followed by the seasoning cubes thyme, basil, garlic, salt,followed by the rice and allow the rice to cook till its done. Add the fresh parsley about five minutes before removing the rice from the heat.
