Ingredients

  1. 1 TBSPOlive oil
  2. 1small onion, chopped
  3. 2celery stalks, diced
  4. 1green pepper, chopped, seeds removed
  5. 2Bay leaves
  6. 2 SprigsThyme or 1/2 TSP dried
  7. 1 TBSPSmoked Paprika
  8. 1/2 TSPBlack pepper
  9. 3/4 TSP.Salt
  10. 4pressed cloves of Garlic
  11. 1Jalapeno, seeded, diced small
  12. 3 1/2 Cupschicken broth
  13. 2 TSP.Balsamic Vinager
  14. 1-2 slicesbacon, cooked and chopped
  15. 1small Ham hock (Or a meaty ham bone)
  16. 1 1/4 CupsDRY black eyed peas
  17. 2 Cupscollard greens chopped into 2 inch pieces (optional)

Steps

  1. 1

    Add oil to pot and press Saute'. When oil is hot add onion, celery, green pepper, bay leaves and cook stirring occasionally until onions are clear.

    Add thyme, paprika, pepper and salt. Stir well.

  3. 3

    Add garlic and Jalapeno and cook 30 seconds stirring frequently.

  4. 4

    Add the broth, bacon, vinegar, and ham hock.

  5. 5

    Stir in black eyed peas, collards (optional) than lock the lid, cancel the saute' and turn steam release valve to lock.

  6. 6

    Cook 17 minutes (select beans option, medium, add 2 minutes,)

  7. 7

    After cooking cycle completes let sit, undisturbed 15 minutes. After 15 minutes release pressure.

  8. 8

    Open, stir, discard bay leaves and ham hock. Serve over rice or just plain.

Just trying to learn how to cook fresh homemade meals with my pressure cooker and looking for great recipes! I am newly married and am trying to make a decent cook so my husband and I have a good meal every night. I struggle being over weight so I'm also looking for healthier recipes. Any tips or tricks for the pressure cooker that anyone is willing to educate me on let me know!
