Ingredients: 1/2 cup couscous (about 90 grams); 1 cucumber, peeled and diced; 2 medium tomatoes, diced; 1 small red onion, finely chopped; 3 tablespoons finely chopped parsley; 3 tablespoons finely chopped mint; 3/4 cup water (180 ml); For the dressing; 3 tablespoons fresh lemon juice; 2 tablespoons olive oil; Salt; Pinch black pepper

Steps

Bring the water to a boil, then pour it over the couscous with a pinch of salt. Stir and let the couscous cool completely.

Add the vegetables, then mix the dressing ingredients together and pour over the salad.

Toss the salad, let it sit for 15 minutes, then serve.
