These meatballs go a long way because the rice makes them bigger and more tender.

Place the ground pork in a bowl with the chopped onion, pressed garlic, salt, eggs, grated carrot, rice, and breadcrumbs. Mix thoroughly and set aside.

In a blender, add the tomatoes (cut into quarters), garlic, onion, chipotle peppers, water, and a little salt. Blend until you have a smooth sauce.

Pour the sauce into a pot and heat until it comes to a boil. Reduce the heat, start forming the meatballs, and add them to the sauce as you go.

Simmer on low heat until the meat is fully cooked.
