Mix the batter ingredients well.

Fry off lardons until crispy, add onions to the same pan so the onions become soft.

Add the onion and spinach to the batter mix. Melt butter in the same pan and cook your pancake. When bubbles appear on top it’s time to flip.

Once your pancake is nearly ready grate plenty of Parmesan over so it melts slightly. Sprinkle chilli flakes on with the crispy bacon and serve with cherry tomato
