Ingredients

  1. 750 gramSarson Saag
  2. 250 gramPalak Saag
  3. 2 cupsWater with a pinch of salt
  4. 4Green chilli
  5. 250 gramBathua Saag
  6. 1 1/2 cupMakki atta
  7. 25 gramGinger
  8. 2Onions
  9. 6 clovesGarlic
  10. 100 gramGhee
  11. 1/2 tspRed pepper powder
  12. 1/2 tspGaram masala
  13. 1/2 tspCoriander powder
  14. Homemade white butter

Steps

  1. 1

    Add the three chopped greens, salt and water into pressure cooker & cook over low heat for 30-35 minutes.

  2. 2

    Squeeze out saag and keep saag water aside. Mash saag in the cooker until coarsely ground, and add makki atta and stir.

  3. 3

    Put back saag water and a little fresh water & boil over slow heat.

  4. 4

    Add green chillies & ginger & cook till saag gets thick.

  5. 5

    For tadka, add chopped onions, ginger, garlic, red pepper powder; garam masala, dhania & saute until onions are light brown.

  6. 6

    Mix into saag & garnish with julienne of ginger fried in ghee.

  7. 7

    Transfer the saag into a serving bowl with lots of homemade white butter and serve with variety of Punjabi style Rotis and enjoy 😊 the winter season.
