Preheat oven to 220°C / 200°C fan.

Wash and scrub potatoes in warm water, dry and set on baking tray.

Drizzle 1 Tbsp of olive oil over potatoes, rub oil into skin, cover generously with salt and pepper at 1:3 ratio.

Cook for for 15 minutes.

Lower temperature to 200°C / 180°C fan and cook for 45 - 60 minutes (until soft and fluffy throughout - test with fork).

Cool for 10 minutes and serve.
