  • 6 ozblack beans
  • 1 1/2 cupscorn
  • 4 ozrefried beans
  • 1/2 cuprice
  • 8small flour tortillas
  • 2 Tbstaco seasoning
  • 1 tspcumin
  • 1 TbsChile powder
  • 1 cupcrushed tortilla chips
  • 8 ozground sausage
  • 4 ozMexican chorizo
  • 1/2med. onion
  • 8 ozMexican blend shredded cheese
  • 1/4 cupsalsa

  1. 1

    Preheat oven to 350 deg. Grease a 9x9 casserole dish. Spray with cooking spray and coat with the remaining taco seasoning. Bake for 45 min.

  2. 2

    Cook the rice adding one Tbsp of the taco seasoning.

  3. 3

    Saute the onion and add the sausage & chorizo. Set aside when done.

  4. 4

    In a large bowl mix the black beans & rice. Add the cumin & chile powder.

  5. 5

    Cut the tortillas in half and line the bottom of the casserole with 5 pieces. Spread a layer of refried beans.

  6. 6

    Add a layer of the meat mixture, a layer of the corn mixture and a layer of cheese. Repeat for the second layer and end with a layer of tortillas covered with salsa, cheese and the crushed chips.
