Peanut Butter Granola

It was one of those days when I suddenly realise there's not enough peanut butter in my life. So I made some peanut butter flapjacks (excellent revision treat for teenagers), and then felt that the mixture could be adapted to a granola, and it CAN! I made a small amount in case it didn't work and suggest doubling it, at least, for a reasonable amount. Crunchy peanut butter breakfast tomorrow, can't wait.

Warm the peanut butter, honey and oil in a pan on a low heat. When melted, stir in the vanilla extract. Preheat the oven to 150C/Gas 3.

Mix the oats and sunflower seeds into the peanut butter mixture and stir well until combined.

Spread the granola on a baking tray lined with baking parchment and place in the oven for 10 minutes. Remove from the oven and turn over the granola, return to the oven for another 5 minutes. Turn again, it may need another few minutes, or just place in the oven and turn it off.

When golden all over remove from the oven and stir in a handful of raisins. Leave to cool completely on the tray before storing in an airtight container. Serve with ice cold milk.
