Ingredients

1 serving
  1. 1soft tortilla
  2. 1 tsppesto
  3. 2-3 slicesParma ham (or Jamon Serrano)
  4. Extra mature cheddar, or other hard cheese
  5. a fewbasil leaves
  6. Black pepper
  7. Olive oil, for brushing
  8. Tomato and pepper salsa, sour cream and sweet chilli sauce, to serve

    Place the tortilla on the work surface and spread one half of it thinly with pesto. Place the slices of ham on top.

    Cover the ham with thin slices of cheese - don't cut the cheese too thickly otherwise it won't melt before the tortilla burns. Top the cheese with a few leaves of fresh basil and a grind of black pepper.

    Fold the empty half of tortilla over the top and press down. Lightly brush with olive oil, and place oiled side down, in a hot frying pan or griddle.

    Cook for a few seconds, then flip over and cook the other side until crisp and golden.

    Serve with the salsa, a dollop of sour cream and a drizzle of sweet chilli sauce.

I enjoy cooking mostly because I like eating, but also because it's a great way to relax at the end of the day. I work in book publishing and especially enjoy creating cookbooks written by cooks who love cooking and sharing food rather than creating show stopping dishes that take days to put together. As Nigel Slater would say; 'we are, after all, simply making ourselves something to eat'. I live with my lovely daughter Isobel who rarely pays any kind of compliment but will occasionally admit something I've cooked was quite nice, and our dog Piper, who will eat anything.
