Roti Jala literally translates to 'Net crêpe or Net Bread' and is a staple Malaysian breakfast or snack food, usually eaten with a side of curry. It is also popular in Singapore, Indonesia and most South-Yeast Asian countries. The intricate lacy pattern of these pancakes gives them a fancy feel, but they're quite easy to make. Usually a Roti Jala mould (a ladle with five holes) is used to make this, but one can also use a bottle with a small nozzle, etc.

Ingredients

6 servings
  1. 2 cupsAll purpose Flour (Maida) -
  2. 2 Eggs (replace with 1 tbsp cornflour or 2 tbsp yogurt/curd if vegetarian)
  3. 1Coconut milk cup (I used powder, 1/2 cup is enough)
  4. 1/4 cupMilk (adjust to make smooth batter)
  5. 1/2 cupWater (adjust to make smooth batter)
  6. 1 tspSalt
  7. 1 tspTurmeric powder
  8. as neededRefined oil -

Steps

  1. 1

    Sieve the flour into a large bowl, add the coconut milk powder, turmeric, salt and whisk with a fork.

  2. 2

    Now add the egg, milk and whisk again.

  3. 3

    Slowly add the water little by little, constantly whisking to make it smooth.

  4. 4

    When the batter is smooth and lump free, add the oil and whisk again. (The batter should be like pancake/dosa batter, not too runny, just enough to spread on pan).

    Use a Roti Jala mould, or a squeezy bottle with a nozzle, or make a large hole in the cap of a bottle.

  6. 6

    Heat a non-stick pan on medium high heat.

  7. 7

    With the bottle, now start to pour our batter in circular motions, essentially creating a lacy design on the pan.

  8. 8

    Let the pancake cook for a minute or two, and then gently, with a spatula, start lifting the edges off the pan, and flip it over.

  9. 9

    Give the other side 1 min again, and then tip pancake on to a large plate.

  10. 10

    Now, let it cool enough to touch, but while still warm, begin folding it like so —- fold either sides inwards, then roll, and tuck the ends.

    Repeat process for the rest, and serve Roti Jala warm or at room temp, with any kind of curry!
