First boil the potatoes and peas, till it's well cooked. Crumble them without mashing and keep aside.

In a bowl mix together with flour, ajwain, salt, and ghee. Rub the flour well to get mix with the ghee well.

Add little by little amount of water,and mix the flour to a smooth dough lightly.cover aside for 15min. Next heat the pan with a ghee or oil, add cumin seeds.when it begins to crackle. Add ginger paste and fry until it's aroma come out of the oil.next add cashew and raisin,and fry for a while. Now add mashed potatoes,and peas,all the spices given along with the salt. Mix and saute for 3 to 5 min. Also mix chopped coriander leaves and let it cool.

To make samosa knead the dough to a smooth. Make 4 to 5 portion and round a ball.grease the rolling area and flatten the ball.with a oval shape.cut it into two portion gently roll it to thin down.spread a little bit of water to join the edges to make it a cone triangular shape and fill the stuff inside.i made a rolling samosa so flatten the samosa ball wit rectangular shape and cut with a strips on other side of the flatten dough,and fill the potatoes and spices masala and smear wateron edges.

You can make the shape of your own different type like normal,or rolling shape. roll it gently after filling the stuff.and seal it with a little amount of flour mix.

Heat oil or ghee over the pan until medium hot.add the samosa in the oil.and deep fry them until it's golden brown.fry untill it gets crispy. And take out from the pan and drain them in a tissue paper. Serve it with chutney or sauce.
