Chicken & Tofu Burgers with Teriyaki Sauce

I like to eat my ‘Chicken & Tofu Burgers’ with ‘Ponzu’ mixed with grated Daikon Radish and a little bit Chilli, but this ‘Teriyaki Sauce’ is also really good! ‘Teriyaki Sauce’ is usually made with Soy Sauce, Mirin and Sugar. For this dish, I added Rice Vinegar, that makes the sauce next level.

Ingredients

6 servings
  • 500 gChicken Mince
  • 400-500 gFirm Tofu *mashed
  • 1Onion *optional, finely chopped
  • 1small piece Ginger *grated
  • 1/2 teaspoonSalt
  • 1/2 teaspoonWhite Pepper
  • Oil for cooking
  • Toasted Sesame Seeds
  • <Sauce>
  • 2 tablespoonBrown Sugar *OR White Sugar
  • 2 tablespoonMirin
  • 4 tablespoonsSoy Sauce
  • 1/4 cupSake (Rice Wine) or Water
  • 1/2 tablespoonsPotato Starch OR Corn Starch *mixed with 1 tablespoon Water
  • 1 tablespoonRice Vinegar

Steps

  1. 1

    Combine all ingredients well in a bowl. Roll mixture into balls. Flatten slightly.

  2. 2

    Heat small amount of Oil in a frying pan and cook until golden and cooked though.

  3. 3

    Place Sugar, Mirin, Soy Sauce, Sake (Rice Wine) and Rice Vinegar in the cleaned frying pan OR saucepan, and bring it to the boil. Mix Potato Starch with Water and gradually add to the sauce, stirring, and cook until the sauce thickens.

  4. 4

    Combine ‘Chicken & Tofu Burgers’ with the sauce. I sprinkled with some Toasted Sesame Seeds.
