1 cupdiced pineapple
1 cupred tomato, seeded and diced (divided)
1/2 cupred onion, diced
2limes, juiced
3 clovesgarlic, minced
1 tablespoonginger, chopped
3 tablespoonschopped cilantro
to tasteJalapeño, diced.
1 teaspoonsea salt
1/2 teaspoonfresh ground pepper

Put pineapple and 1/2 cup tomato in food processor, pulse until finely chopped.

Combine everything in a bowl and chill at least 1 hour to allow flavors to meld.
