Steps

First in a pressure cooker boil potatoes, cauliflower & green peas together for 4 vissels over medium high flame. Once the cooker cools down mash all three vegetables lightly.

Now in a pan take butter, add jeera powder to it once butter melts, then add onions and green onion leaves and cook it nicely for 10min till onions become little brown, then add finely chopped capsicum to it and again cook it for another 10min.

Once capsicum cooks a little add finely chopped green tomatoes and cook it for another 10min, then add garlic and cook well for 5 minutes, then add salt and mix well, then add the mashed potatoes and cauliflower and mix nicely.

Now blanch 1 bunch of spinach leaves, in a mixture jar take blanched spinach leaves, coriander leaves, green chillies and blend it into a smooth paste, then add this paste to the cooking bhaji and lightly mash everything again.

Now mix everything nicely and let it cook for 5 minutes, then add pav bhaji masala mix well and cook the bhaji for 15min over medium to slow heat.

Once everything is nicely cooked check for the seasoning if any required, then serve it with butter pav and chopped onions.
