Ingredients

  1. 1big bunch Green Amaranth leaf
  2. 1cup.of vegetable oil
  3. 6large fresh tomatoes
  4. 3red bell pepper
  5. 8Scotch bonnet pepper
  6. 1bulb of onion
  7. 2cooking spoons thick rich meat sauce
  8. 1 tablespoongrounded crayfish
  9. 1stock cube
  10. to tasteSalt

Steps

  1. 1

    Wash and cut your vegetable then pour hot water over it to blanch it, seive out the hot water after two minutes, add cold water at this point then pour over a filter to drain the water

  2. 2

    Roughly blend your pepper and tomatoes then boil to dry up the water in it

  3. 3

    Next, heat the vegetable oil in sauce pan, add diced onion and sauté, at this point add the blended tomatoes and pepper and continue to fry it almost dry

  4. 4

    Pour in the meatstock then fry toll dry, taste and adjust the taste with stock cube and salt

  5. 5

    Lastly, squeze out the water in the vegetable then add to the sauce, stir and cook for two minutes and bring down

  6. 6

    Serve with either rice or yam
