Traditional light Italian breakfast Cookies are fast to bake and have it with a cup of freshly brewed coffee. Italian breakfast Cookies are crunchy outside and soft inside.
Steps

Sift flour,salt and baking powder together and keep it aside.whisk egg in an electric beater till frothy. Add powdered sugar and mix well until it dissolves well.

Add oil, milk and vanilla extract and mix well. No more electric beater is needed. Add sifted flour mixture to the egg mixture little by little and fold in with a spatula. Mix well and then add next batch.

Transfer the mixed dough to the floured surface. Gently knead the dough. Dough may be sticky.Do not over flour. Roll the dough into long rope shape. Cut into oblong shape.

Roll the pieces on to powdered sugar.

Preheat oven to 180 degree celcius. Arrange in a baking tray.

Bake it for 10 minutes.

Italian breakfast Cookies are ready to serve.
