Simple Rocky Road
I wanted a less sweet version of rocky road. Most recipes I've seen need golden syrup and butter which can make it too rich. My version, with dark chocolate and sour cherries has a bit more of a bite.
Simple Rocky Road
I wanted a less sweet version of rocky road. Most recipes I've seen need golden syrup and butter which can make it too rich. My version, with dark chocolate and sour cherries has a bit more of a bite.

Melt chocolate in a bowl suspended over simmering water. Be patient and resist the temptation to stir until it's almost all melted.

Meanwhile break the digestives into smallish chunks (not dust) and cut the cherries in half.

When the chocolate is all melted add all the biscuit chunks, most of the marshmallows and most of the cherries. Combine well.

Pour the mixture into a lined traybake tin and push into the corners. Scatter the remaining cherries and marshmallows over the top and drizzle on any remaining chocolate.

Chill for at least 1 hour before you attempt to cut it and 1 hour more before you eat it. NOTE: it can be difficult to cut so be careful.
