Ingredients

4 people

1-2sunny-side-up or poached eggs per person
For serving:
1large fried corn tortilla, soft, for each egg
1 cupranchero mole with two shots of white tequila added, served hot
To taste Toasted sesame seeds

Steps

First, heat the mole and the tortilla. Place the tortilla on a flat plate, then add the very hot mole with a touch of toasted sesame seeds.

Place the sunny-side-up egg on top of the tortilla and mole, and serve.

It must be hot so the fat from the mole doesn't taste bad.
