Take all the vegetables in a microwave safe bowl except spring onion and cook it for 5 minutes.

Heat oil in a kadai till smoking. Add star anise and finely chopped ginger, garlic, and green chilli and saute for second.

Add in onions and saute till golden. Add in cooked vegetables and saute for 5 minutes.

Now add salt, sugar, pepper, chilli, soya sauce, vinegar, green chilli sauce and sauté for a minute.

Add in cooked rice, spring onion and mix well. Add chilli oil and toss well.

Add coriander leaves, green part of spring onion and mix well and serve.
