Shape half of the kofta (about 1.1 lbs/500 grams) onto skewers, then slide it off so it forms hollow tubes. Place them in the oven to bake.

Finely chop the onion, garlic, and tomatoes. Add them to a skillet with a pinch of salt and cook over heat. Add the mushrooms and sauté until they soften.

Form the remaining kofta into small balls and grill them lightly. Place them on top of the mixture in a pot. Dissolve the tomato paste in 1 cup water and add it to the pot. Let everything cook over heat for about 30 minutes. Then add the pomegranate molasses and cook for another 15 minutes. Enjoy! Note: You can serve this with rice if you like.
