Ingredients

4 servings
  • 1/2 cupwhite wine
  • 1 canpeaches, syrup reserved
  • 1 cupcanned pineapple, drained
  • 1 cupfresh ripe mango, cubed
  • 3banana peppers, chopped, seeds removed
  • 2 tbsphoney
  • 1/2 cupsweet chili sauce
  • 2 lbchicken breast meat, cubed
  • Coconut flakes
  • Fresh cilantro
  • 1 cupwild rice, cooked
  • 1 cupplain low fat yogurt
  • 2limes, peeled
  • 1/2 tbspfresh ginger, grated
  • 1/2 tbspbrown sugar

Steps

  1. 1

    Make the marinade: Combine wine with 1/2 cup syrup from the canned fruit in a large bowl. Add peppers, honey and chili sauce. Chill for 2 hours to allow favors to blend, then remove and reserve the peppers.

    Meanwhile, to prepare the dipping sauce: blend yogurt, limes, ginger and brown sugar. Chill until ready to serve.

  3. 3

    Marinate the chicken for 4 hours or overnight, then alternate chicken pieces with fruit on wooden skewers. Sprinkle with coconut flakes and a small dusting of cilantro.

  4. 4

    Grill until chicken is cooked through and fruit is slightly blackened on the outside. Add the reserved peppers to the wild rice and serve as side along with dipping sauce.
