Crunchy lemon mandazi
The aroma was an alarm for the family not forgetting the sweetness
Steps

Mix the dry ingredients in a bowl to a sand like texture (flour, sugar, baking powder, lemon rind and margarine)

Pour the lemon juice then add the liquid as you knead. The dough should be firm and not sticky.

Divide into four balls then cover and let it rest for 30 mins.

Roll the balls flat a few inches thick then cut to your desired shape.

Heat oil and fry. Do not use hot oil it will burn them and they'll be undercooked in the inside.

Serve with hot masala tea. Bon appetite.
