Impossible Corn Cake (Pastel Imposible de Elote)

This dessert is very easy to make, but it does require patience to allow for easy unmolding and slicing. The wait is worth it—it's very moist, delicate, and delicious.

Steps
- 1
Make caramel in a skillet with 3/4 cup sugar and pour it to cover the bottom of a baking pan. Once cooled, grease the sides with butter and dust with rice flour.
- 2
Blend all the cake ingredients together (you can do this in batches if needed) and mix well. Pour into the prepared pan and let sit for 15 minutes.
- 3
Preheat the oven to 350°F (180°C).
- 4
Blend all the flan ingredients. After the 15 minutes, pour the flan mixture over the cake batter, wait 5 minutes, then place in the oven. Bake for about 50–60 minutes, or until a toothpick inserted comes out clean.
- 5
Turn off the oven and let the cake cool inside. Remove, refrigerate for a few hours, then unmold.
- 6
Enjoy!
