Ingredients

  1. 1 2/3 lbspork, cut into pieces (I used leg with and without bone, ribs, and shank)
  2. 1 tablespoonlard, softened
  3. Juice of 2 medium oranges
  4. Juice of 1 small lime
  5. 1 splashcane or apple cider vinegar
  6. 1/2 barachiote paste (about 2 oz or 55 grams)
  7. Pinchesground cumin, oregano, and black pepper
  8. Salt
  9. =====Pickled Red Onion and Habanero=====
  10. 1medium red onion
  11. 2habanero peppers
  12. 1 splashwhite or apple cider vinegar
  13. Pinchoregano
  14. Salt

    MARINADE: 4 to 12 hours ahead. In a large bowl, combine the orange juice, lime juice, vinegar, spices, and salt. Add the achiote paste and mash until fully dissolved. You can also blend everything in a blender or food processor if you prefer.

    Pour this mixture over the pork, check the salt, cover, and refrigerate for the recommended time.

    After marinating, rinse the banana leaves under running water, let them drain, and soften them by heating each side for a minute on a griddle or skillet over low heat. Set aside. This makes them flexible for lining the pot.

    Grease the pot with the lard and line it with a layer of banana leaves.

    Check the seasoning and add the pork with all its marinade.

    Cover with a final layer of banana leaves.

    Cover the pot, leaving the vents partially open. Place a heat diffuser under the pot, turn the heat to very low, and cook for 30 minutes.

    After 30 minutes, close the vents completely, lower the heat to the minimum, and cook for another 30 minutes. You’ll see the meat baking.

    Meanwhile, slice the red onion into thin strips and place in a bowl. Finely chop the habanero and add it to the bowl along with vinegar, lime juice, oregano, and salt.

    Turn off the heat, let the meat rest for 10 minutes, and serve warm, either shredded or in pieces (as you prefer), topped with the pickled onion and habanero. Traditionally served with refried black beans and corn tortillas.
