Wash and drain the chicken breasts. Wash and cut the vegetables as desired. Prepare a large pot, add the olive oil, then add the onions and sauté. Add the chickpeas and stir, then add the chicken pieces and cook, stirring. Add the spices and salt, and mix well.

Add the chopped vegetables and stir. Add the cilantro (after washing) for flavor. Pour in the water and bring to a boil.

Cover the pot and simmer for 45 minutes. Meanwhile, prepare the topping: In a skillet, melt the butter over medium heat. Add the onions and sauté until soft.

Add the raisins and stir. Add the sugar and cinnamon, mix well, then cover and cook on low heat, stirring occasionally, until caramelized and thickened (about 20–30 minutes).

When everything is ready, spread the couscous on a serving platter. Top with half the caramelized onions, then add the vegetables, chicken, and chickpeas. Drizzle a little broth over the top.

Add the remaining onions and raisins, then garnish with the hard-boiled eggs. Serve and enjoy!
