Ingredients

Oreo banana bread
120 gbutter, softened
1/2 cupcastor sugar
1/2 cupmuscovado brown sugar
5small bananas
1 tsplemon juice
2eggs, room temperature
2 teaspoonsvanilla extract
1/2 cupbuttermilk, room temp
1/2 teaspoonbaking soda
1 teaspoonbaking powder
1.5 cupsflour
16Oreos, broken into pieces
1/4 cupchocolate chips
1/4 cupwhite chocolate chips
White chocolate ganache
60 gwhite chocolate
30 mlfresh cream

Steps

Preheat oven to 160 C

Spray tins with non stick spray. I used 2 mini loaf tins (18.2cmLx9.6cmWx5.7cmH) and 2 mini bundt pans (10.7cmDiax5cmH)

In a medium size bowl, mash bananas until creamy and stir in lemon juice. Set aside.

In a large bowl, cream together the butter and sugars

Add the eggs one at a time and beat till combined

Add the banana, buttermilk and vanilla and beat

Add all the dry ingredients and the Oreos and chocolate chips and fold gently till no flour is visible.

Pour batter into loaf pan. Tap pan to get rid of excess bubbles and level batter

Baking Times Loaf pan: Bake for about 50-60min
Mini bundt: Bake for about 25-35 min
Mini loaf: Bake for 35-45 min
Cooking times will vary and depend on your oven and the size of your tins. Please check after the 20 min mark for mini loaves/bundt

Cool the banana bread in the pan before removing it

White chocolate ganache:
Use a 2:1 ratio of white chocolate to cream
Heat cream and white chocolate in the microwave till melted
Set aside. It will thicken as it cools
Drizzle over Oreo banana bundt and sprinkle with more oreos. Or leave the banana bread plain and eat as is. Enjoy!
