In a large bowl, combine 2 cups of flour, 2 cups of warm water, sugar, powdered milk, and yeast. Mix well, then let it rest for 5 minutes. Add the remaining 3 cups of flour, vegetable oil, and salt. Mix and knead until a dough forms. Let the dough rest for at least 30 minutes.

In a separate bowl, mix the spinach with onion, salt, sumac, lemon juice, and harissa or hot pepper. Stir well, then place the mixture in a strainer to drain out any excess liquid.

Divide the dough into small pieces to make about 25 balls. Roll out each ball, fill with the spinach mixture, and seal into a triangle shape. (For a visual guide, see the video on the channel.)

Brush the tops with olive oil for extra crispiness. Bake in a preheated oven at 350°F (180°C) until golden, then broil briefly to brown the tops.
