Ingredients

  • 3 cupsliced zucchini
  • 1 cupbisquick
  • 1/2 cupgrated Parmesan- I use more
  • 1 Tbsparsley
  • 1 tspseasoned salt
  • 1/2 tsporegano
  • 1/2 tspgarlic powder - I use more
  • 4eggs slightly beaten
  • 1/2 cupcanola oil
  • 1/2diced onion
  • to tastePepper

Steps

  1. 1

    Combine all ingredients in a mixing bowl except zucchini. Dry first, then moist.

  2. 2

    Fold in zucchini

  3. 3

    Put in greased 9x13 pan and bake for 40 min at 350. Top with sprinkled Parmesan prior to baking.
