Mexican pancakes or Muffle is a very delicious mexican version of pan cakaes made with semolina, all purpose flour and milk. A very soft, light and delicious pancakes that you can have as breakfast with any kind of cheese or jam .

Mexican pancakes or Muffle is a very delicious mexican version of pan cakaes made with semolina, all purpose flour and milk. A very soft, light and delicious pancakes that you can have as breakfast with any kind of cheese or jam .

Put warm water, yeast and sugar in a blender. Let it stand for 5 minutes to broom the yeast.

Now add all the other ingredients except butter and blend until mixture is smooth.

Leave the mixture for about 30 minutes.

Heat a skillet. Grease it with little butter.

Pour 1 tablespoon of batter. Cover and cook in low flame for 1 minute.

Spread some more butter on the top and remove from skillet.Don't cook the top side.

The pancakes should be soft and light brown spots should appear on back side of the pancakes.

Make all the pancakes like this.

Serve warm or room temperature with any spread or jam of your choice. I served with homemade strawberry spread.
