This is my mom's own creation and very close to my heart.
When I was a kid some of my friends used to bring chicken sausages in their tiffin boxes and they looked so tempting but I was totally vegetarian so couldn't eat them. When I told my mom, she developed this recipe of veg sausages and believe me when I took them in my tiffin all my friends including non vegetarians loved them.
My kids and their friends too love it so much.

Knead a dough with all the ingredients for rolls( wheat flour, chickpea flour,carom seeds,salt and oil.

Make rolls with them.

Boil water in a skillet. Put all the rolls in it one by one.

Boil them on medium flame. When they start coming on top it means they are done. Switch off the gas.

Take them in a strainer. remove the water from them and let them come to room temperature.

Cut them into slices.

Now heat oil in a skillet. Put cumin seeds. Let them crackle. Put onions in it when they turn translucent add tomatoes and salt. When tomatoes get mushy add capsicum,carrot,green chilli. You can add as many veggies as you want in this recipe like beans,cabbage (best way to feed the veggies to your fussy kids). saute for some time.

Now add sliced sausages. Saute and add all the dry spices.

Mix well and saute for another 2-3 minutes.

Garnish with green coriander and serve hot in breakfast or pack in your kid's tiffin box.
