These are what you will need for this recipe.Grate your cauliflower like in the picture below. Chop your vegetables

In a Pan add two tbsp of oil, allow to heat, then pour in your chopped onion, then add in your peas and carrots.

Break your eggs and beat them lightly in a bowl, move your vegetables aside, then pour in your lightly beaten eggs, scramble them, then pour in your grated cauliflower and 2 tbsp soy sauce,salt nd seasoning cube.

Stir-fry for 5 mins

Serve and garnish with chopped parsley leaves
