Steps

Cut beef into bite size pieces and boil in 1 cup of water then set aside

Clean rice thoroughly and set aside.

Dice the onions and mince the garlic

In the same pot used for boiling beef, heat cooking oil on medium heat then add in the onions and garlic and sautè till brown in color but not burnt.

Add in the salt and pilau masala stir, then add the tomato paste the stir again.

Add the boiled meat and potatoes and mix them in well

Pour in 3 cups of water, mix and allow to just come to a boil

Add in the rice and stir from the bottom up to prevent the rice from sticking to the bottom of pot

Let boil and once the water is reduced cover the cooking pot and reduce heat to the lowest setting. Let is cook slowly until all the water has evaporated and the rice is soft and cooked

Use a fork to fluff the cooked rice then remove from heat.

Serve with kachumbari and enjoy!!
