As a kid, I simply hated having gawar fali. As I studied nutrition in college, I couldn't resist including this in my diet.Containing just 15 Kcal per 100 grams, this particular veggie is lower in calories yet a powerhouse of nutrition, abundant with proteins(4g/100g), minerals and vitamins along with dietary fiber. The mixture of higher protein as well as fiber together with low calories and fat provides weight loss advantages. A super food with numerous health benefits, it's demand in US is very high. It's a rich sauce of iron, calcium, phosphorus ,vitamin C,E&Ke,and fiber. It helps in building bones and teeth, prevents anemia,improves blood circulation and reduces baad cholesterol. It is a miracle food for diabetics. As constipation is a major problem during weight loss, gawar aids digestion.
This simple recipe, which I learnt from another food enthusiast, makes this humble fali super tasty and has very less fat content.

Ingredients

  1. 250 gGawar fali/ cluster beans ( fresh, soft, small or medium size)
  2. 1/2 tspred chilli powder
  3. 1/2 tspcoriander powder
  4. 1/4 tspturmeric powder
  5. 1/4 tspsaunf/ fennel powder
  6. 1/4 tspajwain/ carom seeds
  7. 1/4 tsphing/ asafoetida
  8. 2-3 dropsghee/ clarified butter
  9. to tasteSalt
  10. 1 tsplemon juice
  11. 1 inchpiece of charcoal for smoking

Cooking Instructions

    Remove the ends of the beans. If the gawar is long, tear into half or 2-3 pieces. Wash and boil the beans with little salt. Strain and keep in a big bowl.

    Add all the dry spices(except ajwain)to the gawar along with a pich of hing. Mix well.

    Make space for a small spoon or katori in the center of the bowl. Heat a piece of charcoal on flame till it is red hot.

    Place the hot charcoal in the small katori or spoon in the bowl. Put remaining hing and ajwain on the charcoal. Now pour few drops of ghee on the burning charcoal and immediately cover the vessel tightly, so that the smoke remains inside the bowl. Let the smoke get infused into gawar completely for 4-5 minutes.

    After 5 minutes, remove the charcoal and the gawar with the same spoon or pour contents of katori in the gawar and mix well.

    Add 1 tsp of lemon juice and serve the yummy smoky gawar with tomato and onion salad.
