These dough balls are a traditional dish in northern Italy and Austria. They can be made with a variety of ingredients such as spinach, bacon or cheese - my personal favorite. You can serve them either whole (plate on the right) or cut into small cubes and fried in a pan (plate on the left).

Ingredients

  1. Dough balls
  2. 150 gstale white bread (cubed)
  3. 150-175 mlmilk
  4. 100 gold cheese
  5. 2large sized eggs
  6. 6 gspelt flour
  7. Parsley
  8. Chives
  9. Garnish
  10. Parmesan cheese
  11. Butter
  12. Salad
  13. 1iceberg salad
  14. White wine vinegar
  15. Olive oil
  16. Salt

    Overview of all ingredients. Note: the ingredients listed above will result in 5-7 dough balls. I used double the amount when I took these pictures resulting in about 10-14 dough balls.

    Chop the cheese into small squares/cubes. Chop the parsley and chives finely. Add all ingredients for the dough balls into a large pot.

    Mix ingredients with your hands until everything has been evenly mixed.

    Let it sit for 30 until all of the milk has been absorbed. If the bread is still hard to the touch, add a bit more milk

    Divide the mixture evenly to form 7 dough balls. Simply roll and press them between your hands

    Cook the dough balls in slightly boiling salt water for 12-15 minutes. Note: no rolling boil or the dough balls might fall apart

    Once the dough balls are cooked, you have two options: 1. Eat them as they are with some butter poured on top and garnished with Parmesan cheese, or, 2. Chop the dough balls into small pieces and fry them in a pan with butter. Then garnish with Parmesan cheese.

    Serve the dough balls with a fresh green salad on the side
