Ingredients

30 minutes

  1. Main dish
  2. 8 sliceslightly toasted bread (crispy but not toasted till brown)
  3. 3 tbspoil
  4. 1 pinchhing
  5. 1 tbspmustard seeds
  6. 1 tbspcumin seeds
  7. 2minced green chillies
  8. 1 tbspminced ginger
  9. 6-8curry leaves
  10. 1 cupdiced onions
  11. 1 cupdiced tomatoes
  12. 1 tbsppav bhaji masala
  13. 1/2 tbspred chilli powder
  14. 1 tsphaldi
  15. 1 tbspGaram masala
  16. 1 pinchamchoor powder
  17. 1/2 tbspsugar
  18. For garnish
  19. 1 cupchopped cilantro
  20. 1 tbspminced and fried ginger
  21. 1/2lemon squeezed

Steps

30 minutes
  1. 1

    Dice the toasted bread into bite sized squares and keep it aside (optionally discard the borders and add two slices to maintain the quantity)

  2. 2

    Heat oil in a wok / kadhai on full heat and add hing

    Add mustard seeds and wait for them to start popping

  4. 4

    Reduce heat to medium and add cumin seeds and they should sizzle immediately

  5. 5

    Add minced ginger (from main section) and wait for about 30 seconds for its fragrance to be unleashed

  6. 6

    Add onions and fry on medium heat until they turn pink

  7. 7

    Add red chilli powder, pav bhaji masala and haldi and mix well

  8. 8

    After 1 minute add tomatoes and salt and fry until the tomatoes are cooked (ooze out a little oil)

  9. 9

    Add garam masala and amchoor powder and mix for 1 minute

  10. 10

    Lower heat to minimum and add the diced bread and adjust salt to taste

  11. 11

    Add chopped cilantro and lenon juice and stir lightly for 1 minute

  12. 12

    Turn off heat, add sugar, stir and cover

  13. 13

    After about 1 minute your dish is ready to be served
