Ingredients

  1. 600 gdiced fresh tomatoes (I used a combination of Roterno, Arlinta and Sunstream variety from @ericwalltomatoes)
  2. 120 gonions, sliced thinly
  3. 1 cupwhite sugar
  4. 1 cupwhite vinegar
  5. 1/3 cupmalt vinegar
  6. 1 1/2 tspmustard powder
  7. 1 tspsalt
  8. 250 gcan sweetcorn kernels
  9. 1 tbspwater
  10. 2 tbspcornflour

Steps

  1. 1

    Combine tomatoes, onions, sugar, vinegars, salt and mustard powder in a pan. Bring to a boil, reduce heat and simmer for 1 hour. Stir the mixture occasionally.

    Add in the corn and simmer for another 20 mins

  3. 3

    Combine the cornflour and water to form a slurry. Add to the corn mixture and bring to a boil. Reduce the heat and allow to simmer till thickened slightly.

  4. 4

    Transfer to sterilised jars and allow to cool. Then refrigerate and enjoy!.
